TWD Blueberry Sour Cream Ice Cream

This week's recipe was selected by Dolores of Chronicles in Culinary Curiosity. I was looking forward to trying out this recipe because I love blueberries AND homemade ice cream!!


The recipe was very simple and easy to follow, although I have to admit when I put the blueberries and sugar in the pot, with the splash of lemon juice, I truly thought there is no way this combination is going to "boil". There wasn't any liquid in there TO boil! But as I watched it heat up, the blueberries each eeked out a little juice, and after a couple minutes, there was blueberry juice covering the bottom of the pan and I was proven wrong. It boiled!

A quick spin in the blender, a pulse or two with heavy cream and sour cream, and then it was off to chill in the fridge for a few hours. After it was chilled, I dumped it in my Cuisinart ice cream maker and let it spin while I went to pick up my son from pre-school!

Upon our return, I had a frozen blend of yummy blueberry sour cream ice cream, that even my 3 year old son loved!

I usually make him lunch as soon as we get home from pre-school, but today, after I let him try a bite of the ice cream before sticking it in the freezer, he told me, "Mommy, just get me a bowl and a spoon, and I'll eat ice cream for lunch!"

Nice job...i let mmy baby eat ice cream anytime - so I amglad other Moms let their kids eat it at lunch too!

I have to confess - I didn't believe it would boil either, so I smooshed the blueberries when they went in the pan. But ice cream for lunch - now that's an idea!

My little one loves ice cream. Didn't have an ice cream maker but now I wish I had bought one. Maybe for Christmas.

How cute. But the question is did you let him? I know when my daughter tried a taste this morning she would have gladly given up her eggs for ice cream, but I am a mean mom!
